Recently I was invited to a not-so-last minute family gathering with one requirement: every one brings an app to share.
Normally I wouldn’t panic – but also normally I’m not trying to deep clean and meal prep for a giant birthday party the next day. Needless to say I was desperate to make something that would be no-fuss, minimum mess, with things I already had on hand.
Thus was born my Buffalo Chicken Dip.
I would be lying if I said I’ve never seen this before. I actually bought a buffalo chicken dip from Costco almost a year ago, but since that glorious purchase the dip disappeared from the shelves I was left dipless and wanting. I think I uncovered that desire in my search for an easy dish to bring.
Notes on Ingredients
Your favorite buffalo sauce. I used Sweet Baby Ray’s Buffalo Wing Sauce, but you could probably get away with just about any buffalo sauce.
Chopped chicken. As a part of my weekly shopping trip I always like to grab a bag of Costco’s pulled chicken breast meat. I love having it on hand for sandwiches, salads, and a quick way to toss together a casserole. You can use canned chicken too, the texture just might vary a bit.
Ranch Seasoning. You can probably omit this if you don’t have it on hand but I found the dip to be a bit thin without just a tablespoon of ranch seasoning to provide a little bit of thickening agent. The herbs included is just a flavor bonus.
Vegetables for serving. I HIGHLY recommend serving this with jicama sticks or the base of green onion sticks. It’s also fantastic with carrots, crackers, or tortilla chips.
Sour Cream & Mayo. I use standard full-fat sour cream most of the time, but this can be subsituted for greek yogurt in a pinch. I generally use olive oil based mayo, but that’s because that is the type I keep in the house. You can use any type of full-fat, regular, lite, or alternative mayos.
Gorgonzola. I like to top or layer this dish with sprinklings of gorgonzola. It adds the next level of decadence, creaminess, and salt. This item is totally optional, I know some people get really turned off by blue cheese so leave it out if you think it’s a deal-breaker.
Favorite Tools Used
When I cook or bake with things like sour cream or mayo, I like to use cookie dough scoops because they each have a little sweeper which makes measuring (and removing) the ingredients an absolute breeze. When making this recipe I used this 2 tablespoon cookie dough scoop by gorilla scoops. I love this brand because it never breaks or jams (no matter how stiff the scooped item), and it comes in sizes that range from 2 teaspoons to 8 tablespoons.

Instructions
- In a bowl combine all ingredients, except for the gorgonzola.
- Use a hand mixer to blend the ingredients together, until thoroughly combined.
- Garnish with gorgonzola or blue cheese, if desired.
