Really Easy (And Quick!) African Peanut Chicken

My dad is the real chef in the family. He makes this chicken peanut stew that is amazing. Whenever I ask for the recipe he always (boastfully) claims that it’s just slightly “souped-up” from a recipe he found in Costco Today magazine. (Did you see that dad joke there)

Now let me tell you, his soup is no where near the Costco version – I know, because I found it and I cooked it and it did not resemble anything like his warm and savory bowl of peanutbutter love.

And so then my hunt began. Well, long story short, I could never make the soup work… but I did find a way to get all that beautiful flavor jammed into a thick and saucy chicken recipe. Best served with cauliflower rice… or regular rice.

Why this recipe works:

Tomato Paste – Gives the sauce some acid and flavor, but most importantly gives it that cooked-all-day richness

Coriander – Paired with ginger and garlic, seasons the sauce and brings the peanut butter into the savory zone

Smooth Peanut butter – Brings in the nuttiness and that decadent texture

White Wine Vinegar – Adds brightness & acid (ie: tang)

Coconut Milk – Thins the sauce and adds a touch of sweetness

Chicken Drumsticks with African Peanut Sauce

Description

This simple peanutty chicken is a fresh take on Western African Peanut Soup. Think a thicker sauce, tender fall apart chicken, and less ingredients (and time!) to throw it together.

Ingredients

Instructions

  1. Preheat oven to 375
  2. In an oven safe non-stick sauce pan, add butter, onion, and garlic. Sautee over medium heat until softened, remove from heat and set in aside in a bowl (at least 6 cup capacity).
  3. Pat chicken dry, salt and pepper, and then add to the pan, searing each side over medium heat until golden.
  4. Meanwhile, add remainder of all ingredients to the mixing bowl and whisk until the peanut butter and coconut milk have incorporated well.
  5. Pour sauce over chicken once all sides are seared, then transfer pan into the oven. Bake until internal temperature of the chicken reaches 165, about 20 minutes.
