Nothing screams summer like a good hummus.
This hummus is light, airy, and incredibly creamy. White beans are used to add a bit of nuttiness, and the garbanzos and tahini whip up nice and smooth.
You can add a little water to make it even lighter, or avoid thinning it out altogether for a thick and decadent dip.
White Beans – Adds a delicate nutty flavor, can be replaced with additional garbanzo beans
Tahini – The real star of a good hummus is a great tahini (ground sesame seeds)
Fresh Lemon – Zest & Juice gives the gift of tang
Cumin & Paprika – Adds smoke and color
Garlic – Mellowed, with a quick browning, and adds depth and is used to flavor the oil
Sea Salt – Balances out the acid
Olive Oil – Provides a savory & decadent flavor
Mediterranean White Bean Hummus
Description
A light, creamy, & incredibly smooth white bean hummus, packed with plenty of lemony goodness.

- In a small pot combine garbanzo beans, white beans, and baking soda with water (enough to cover the beans with 1-2 inches of room), bring to a boil and cook for about 15 minutes. Once done drain the beans in a fine mesh strainer. See notes 1 & 2
- While boiling, use a vegetable peeler to remove 2-3 strips of peel from the lemon, set aside. Once done, juice the lemon (should yield 5-6 tablespoons). See note 3
- In a sauté pan, over medium heat, brown the garlic cloves in the olive oil. Remove the garlic cloves from the oil once golden and set the olive oil aside for later use.
- This is where the magic happens. In a food processor or blender, combine 2 strips of lemon peel, 5 tablespoons lemon juice, 1 teaspoon of cumin, 1 teaspoon of salt, 1 teaspoon of paprika, garlic cloves, beans, and tahini. Blend for 2-3 minutes, until smooth, scraping down the sides and using water to thin as desired ( up to 1 tablespoon).
- Dish in a bowl and drizzle the top with garlic oil. Garnish with paprika if desired.
Notes
- (1) When done, the garbanzo beans will have skins free-floating in the water, and the white beans should have burst.
- (2) If a garnish is desired (as shown in the picture), remove 1 tablespoon each of garbanzo beans & white beans prior to boiling.
- (3) If the lemon juice yields less than 5-6 tablespoons, replace missing liquid either with bottled lemon juice or white wine vinegar
